Chicken Salad

Ingredients


  • 1 rotisserie chicken

  • 3 stalks celery

  • ½ sweet onion, diced

  • Handful fresh parsley, dill, cilantro (you choose or mix), chopped

  • 1 cup grapes, halved

  • ½ cup mayo

  • ½ cup plain Greek yogurt

  • Juice of a lemon

  • Seasoned salt to taste

  • ½ cup toasted pecans, chopped

Method


Skin and debone chicken and tear into bite size pieces.  Mix with the rest of the ingredients (celery through salt).  Add in halved grapes and toasted pecans if desired.  If I am not serving right away, I keep the pecans separate until I serve.
