Mexican Street Corn Salad
Ingredients
1/2 cup plain yogurt
3 Tbsp lime juice
1 tsp honey
1/2 tsp paprika
1/2 tsp cumin
1 tsp Southwest seasonings (optional)
1 tsp salt
3 cups of corn kernels (leftover grilled corn is awesome but this is still delicious with plain frozen kernels)
1 clove garlic, minced
1 jalapeño, finely chopped (i remove the seeds and membranes but if you want more heat, leave them in)
1 cup cherry tomatoes, quartered
1 red bell pepper, diced
1/2 chopped sweet onion
1/2 cup fresh cilantro, chopped
1/2 cup crumbled feta cheese
Method
Mix the yogurt, lime juice, honey, spices and salt.
Toss with all the vegetable.
top with feta cheese.
