Mom’s Oatmeal Cake
Ingredients
Cake
1 1/2 cup boiling water
1 cup quick cooking oatmeal
1/2 cup butter (room temp)
1 cup dark brown sugar
1 cup sugar
2 eggs
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
Topping
1/4 cup brown sugar
1/2 cup sugar
1 cup flaked coconut
1 cup chopped pecans
6 Tbsp butter
1/4 cup milk
1/2 tsp vanilla
Method
In small bowl, combine oatmeal and boiling water - stir and set aside.
Preheat oven to 350 degrees. Grease a 9x13 baking pan.
In another bowl, mix together flour, baking soda, spices and salt.
In large mixing bowl, cream butter and sugars. Beat in eggs and cooled oatmeal.
Add in dry ingredients and mix just until combined.
Pour batter into prepared pan. Bake for 30-35 minutes, until cake springs back when lightly touched.
While cake is baking, combine all the topping ingredients except vanilla in a medium saucepan. Heat until butter is melted and everything is very bubbly. Take off heat and add in vanilla and stir.
As soon as the cake is done, spread the top with the topping.
Set oven to broil. Put the cake back in the oven and watch carefully. You want it very toasted brown but if a few are a little darker, I think it taste perfect.
