New Year’s Day Pork and Sauerkraut

Ingredients


2 lbs country style pork ribs

1/2 Tbsp oil

salt and pepper

1/2 cup dry white wine

1 apple, cored peeled and diced

2 lb bag sauerkraut, drained

1 Tbsp brown sugar

1/2 dry mustard

Method


  1. Heat oil in medium dutch oven over medium high heat. You can use a deep oven safe saute pan if you have a big one with a lid. Salt and pepper pork ribs and brown pork in pan, turning to get all sides browned. Set aside on a plate.

  2. Add wine to pan to scrape up all the fond. Add in the rest of the ingredients and stir to mix. Nestle pork down into the sauerkraut. Pour in any drippings.

  3. Cover pan and place in a 350 degree oven for about 2 1/2 hours. Pork should fall apart when done. Serve with mashed potatoes.
